If you’re going to be making ice cream regularly, an ice cream maker is a good investment. But even if you don’t want to invest in one, there are times – like now, when it feels as though your house is on fire – when you might want to whip up a chilled dessert yourself, and that’s where we can help.
There are a number of ice cream recipes out there, but we’ve found three of the simplest. They are three-ingredient ice cream recipes – and one doesn’t even need to be frozen.
Frozen berry ice cream
This recipe comes courtesy of small appliance brand Dualit. It only needs five minutes of prep time and, if you freeze the berries first, you can eat it straight away. It will make about eight servings.
Ingredients
– 200g frozen raspberries – 250ml double cream – 1 teaspoon of icing sugar
Method
1. Blend all of the ingredients for 30 seconds.
2. Eat!
Lemon curd whirl
This recipe was emailed in by a reader, John Gass (thank you John!), who assures me it’s amazingly refreshing. And that’s exactly what we need right now.
Ingredients
– One large tub of Greek yoghurt – Meringue chunks – Lemon curd
Method
1. Pour the Greek yoghurt into the container you’ll use for freezing.
2. Add some chunks of meringue (pre-made supermarket meringue is fine).
3. Swirl in lemon curd to taste. Don’t mix it too thoroughly, as what you’re after is veins of lemon curd.
4. Stick it in the freezer, ideally overnight, or at least for as long as your self-control will allow.
5. Go for it.
Simple vanilla
Ingredients
– 300ml of double cream (one small pot) – 268ml of condensed milk (two-thirds of a small tin) – 1 teaspoon of vanilla extract (and you can even skip this if you don’t have it)
Method
1. Put the condensed milk and the cream in the fridge to chill for an hour or two, along with the bowl you’ll use to mix up your ice cream.
2. Pour the cream into the bowl. Using a hand or stand mixer with a whisk attachment, whisk the cream until it forms soft peaks.
3. Add the condensed milk. Whisk again until the mixture forms stiff peaks.
4. Stir in the teaspoonful of vanilla extract (if you have it).
5. If you want to add flavour to your ice cream, this is the time to do it. You can add crumbled cookies to the mix, swirl in fruit puree, throw in crushed M&Ms or chopped cherries.
6. Transfer your ice cream mixture into freezer containers. (If you don’t have anything suitable, you can buy 50 cardboard tubs with lids from Amazon in the UK for £12.87.)
7. Leave the ice cream overnight for best results. At a minimum, freeze it for six hours.
8. Consume!
